Healthy Vegetable Curry Recipe

This fragrant dish has a creamy coconut sauce and contains three of your five-a-day. It is also healthy and low in fat.

Sweet Potato and Spinach Thai curry

1 large sweet potato
1 bag of spinach
1 can of low fat coconut milk
1 teaspoon of green Thai curry paste
1 red pepper
Fresh basil leaves
A handful of cherry tomatoes
Jasmine rice to serve


1. Begin by par-boiling the sweet potato, then drain and leave to one side. Meanwhile, fry the pepper with a teaspoon of the green curry paste. Add the tomatoes and cook until they are soft and the juices begin to ooze out.
2. Add the coconut milk and mix well until you have a creamy sauce. Add the sweet potato and leave to simmer for 10 minutes.
3. While the curry is simmering, prepare the rice. Add an extra crunch to the rice by adding in some flaked almonds or even some raisins to sweeten it up.
4. Just before serving, add in a couple of handfuls of spinach. Serve with the rice and sprinkle with some finely chopped basil leaves.
